German Mandarin Muffins

You need

A bowl with a tide lid (Tupper ware or something like it)

For the dough

2 cups of flour

1 cup of sugar

1 tablespoon of baking powder

1 tablespoon of vanilla extract

3 large eggs

4 ounces of regular vegetable oil


For the topping

1/2 cup of sliced almonds

1/4 cup of sugar

Put all the ingredients for the dough in the bowl, put the lid on and shake VERY well. (wonderful work out for your arms)

Open bowl, use a spatula and turn dough just 2 or 3 times, (no real stirring or mixing please)

Pour everything in a muffin or baking pan

Add the almonds on top and sprinkle some sugar on

Bake at 400 degrees for 30 to 35 minutes

Can’t get any easier than this. Preparation including clean up time is less then 15 minutes.
